Downgrade PS3 to 3.41

I upgraded my console to 3.42 before I knew that a jailbreak was actually made.So, now if I format my hard drive and disconnect the ps3 from internet will I be able to install the 3.41 FW from an usb key?

can i play my real ps3 games online after i jailbreak without the risk of getting banned and then logout of psn and play backups..or do they know you jailbroke it soon as you go online no matter if your playing real games or backups
