How to edit EPS/AI vector files?

I need some help from you.
I would like to ask, how do you edit an EPS/AI vector files?
I tried opening with Illustrator but when i try to edit, everything is a path nodes, and everything is in a layer.
The files that i tried to edit is the Christmas vectors that resides in the Templates & Scripts forum.
Could someone teach me how to edit them? Thanks a lot!
