If you want to make a demo , you must cut most of the resources and code lines(optional) and release only the resources required for the short version(demo), if you want to make a trial you have got to do some tricks with the executable file and i think the registry entries.
If I am not mistaken there are software which make a trial of your software/game google that for more info.

Yes there are but don’t bother with the desktop app ones. They are so easy to crack (if fact there are apps to do a one click crack of the trial) that you might as well make the game donation ware.
The online licensing ones are good, but they all cost $ and as they are online so you can’t avoid payment.
