DVD to x264 (conversion) Help

I wanted to convert some of my DVDs to MKV with x264. I was thinking either StaxRip or VidCoder to get the job done. I know how to keep the original audio by choosing Just Mux or Passthrough. Should I alter the resolution? I mainly choose the output file size as my default, which determines the bitrate. In the past I usually turn a 4-5GB file into a 1-1.5GB encoded size. What are some of the best settings to get the best quality using x264?

I copy the main movie with DVDfab, getting rid of unwanted audio (other than english). Freemake has had a lot of mixed reviews over the past few months. That’s why I mentioned StaxRip or VidCoder. They are both up-to-date and well known on most forums.

I have used MeGUI, it’s more advanced than others.
VidCoder uses Handbrake which makes it a handy tool.
