Yeah, welcome to the forum.
Handbrake is really easy imo, but you also need a good PC for that.
Now, I don’t know exactly how they do their encodes, but I can tell you what did I used and that the quality is/was really nice. – didn’t used handbrake for some time now.
So, I recommend Handbrake.

How do I re-encode movies.
Well, I find either 720p or 1080p, their size is ~4gb for 720p and ~8gb for 1080p – this have really great quality – size can be different of course since it depends from whom do you download.
It is all up to you, you can use those 40gb movies if you want.
Then you open Handbrake add your file and follow that tutorial, but:
with some changes, at least I change some things.
1st – Don’t change video resolution – if it is 720p, leave it – video quality Will be better.
2nd – I used Avg Bitrate with 1500 kbps as I remember and with 2-Pass Encoding and with Turbo First Pass >>>>> This will “decide” your movie size which also depends on the length of the movie but it should be around ~1gb for ~1h30min movies to ~1,4gb for ~2h movies.
Of course, if you think that the size is too big, I think that you will be also satisfied if you put Avg Bitrate to 1000 kbps – then it is ~300mb less I think.
And that is it, follow tutorial for settings you should use in handbrake; with my opinion above if you want.
Do some encode and see if you are satisfied with it.

they are using megui also, if you check their files using media info, you will notice that the encode setting is only availble in megui so it tells me that its megui, the only problem you have is how to make it good quality, you should have the raw file and down size it if you want, the real trick is the encode settings
I dont know ‘much’ about encoding movies really, but these guys have been encoding for ages now, so even trying to get the same quality they have (with the same file size) will be quite a task. Dont expect anything ‘great’ straight away.
