Ipod touch restore from back up

So I made the mistake of updating to 5.0, made everything slow as **** and several apps just don’t work anymore.
Every time I connect the ipod to Pc, it backs up automatically.
The question is, I want to go back to factory settings and then restore from back up…. but will this back up reinstall 5.0 again? or will it leave the precious and fast factory iOS and only restore apps, apps data?

1. Backup is not same as RESTORE (Restore = Format, Restore from Backup = Returning stuff that you made with backup to current installed OS)
2. You can go back to 4.3.5 only if you have SHSH blobs…
3. No SHSH Blobs = No downgrade
4. No, it’s not to possible save SHSH blobs now (only for latest FW, and that is 5.0, and even that is not possible because there is no tool to do that, TinyUmbrella isn’t udpated to do that..)
