How do I insert a template/letterhead when replying to email

I was looking to find out how to insert a template or letterhead in my emails. I have seen many companies who are able to insert full webpages,logos and fixed templates but I am not sure how to do it. I use outlook/hotmail for my emails and I am aware that there is an option to use HTML in emails, however I don’t have a clue how to do the email template. Also, I use a signature as it is provided in the settings in outlook but cannot find anything to do with templates or letterheads.

You simply write your e-mails in HTML instead of plain text. You will need to know HTML for this.
This also requires that the person receiving/viewing the e-mail has an e-mail client that supports and has HTML enabled.

As has pointed out – not everyone chooses to receive mails with html, it’s safer in a business environment to just use plain text.
Thank you for your responses. I would like to create a sort of header with a box frame and at the bottom a footer, would this be best done in photoshop?
