Guide to encoding to MKV from DVD

I’ve just got a few DVD’s of some Animes that are really really hard to find anywhere online, or are really poor quality rips, so I decided to rip my own copy and upload them for everyone.
What I need now is a comprehensive guide to making a good rip, and preferably in the MKV container. AVI is cool too if anyone wants it.
Thing is, I wanna comply with the standard scene guidelines of set sizes per episode and whatnot. Standards are 700MB, 350MB and 175MB, and I need a software that can help me do that. You know, the whole set of what I need to rip, convert, encode and mux video/audio and subs into MKV.
Help is much appreciated as I am aiming for 350MB episodes with the highest possible quality.

Thanks! I’ve been getting to grips with Handbrake (grip, handbrake, gettit? *sigh*..) and it’s working out really well. Just having a little problem with subs as the source has some pixelated subs >.>
