You could awalys ues vob2mpg for lossless conversion or Sorenson Squeeze 6 with the mainconcept encoder which has superior compression/quality and encoding times than x264.
Try fairuse wizard.

You could just copy the whole dvd as it is, use AnyDVD.

Personally I would suggest using whatever file size the original dvd is and making a 1:1 copy. On a large tv screen I would imagine that any form of re-encoding would be very noticeable.
what i just tried was, used magic iso and just converted dvd to iso image.seems to look like dvd quality besides the fact it doesnt fill the screen like a dvd would. i manually stretched but id have to do that each time.
