Unable to update to official iPhone 3.0 Software

I updated to the iPhone 3.0 Beta a few weeks ago, but now iTunes thinks I have the “official” 3.0 update and says that I am up to date with my iPhone Software.
Does anyone have any ideas on how I can get iTunes to get the official version? I wanted to restore my iPhone to an older software version and then get iTunes to update, but for some reason it won’t let me restore

Simplest but most risky way, backup all your files and settings, I know there are programs that do it all for you. Then reformat it and install the official software. Or just wait for the next update and it should update you to the official thing.
Sorry for not being precise, I know a lot about windows mobile phones, not iPhones.
