Ipod touch backup

what’s the best way to backup the settings and apps on the ipod touch after you jailbreak it?
i don’t see anything on itunes for this

Plug in iPod Touch
Run iTunes
On left you will see your iPod Touch
Right click on it
Backup
Done..
