iPhone – run hacked applications.

I’m really confused about the whole iPhone unlocking. I’ll explain what I want, basically I would like to be able to use applications downloaded on on my phone while retaining the use of my phone (I’m on contract, would still like to use 3G internet access) I’m not bothered about sim-unlocking. Could anyone direct me to what I need to do?
I just updated to iPhone 3.0 yesterday, I’m not sure if this matters.
Yeah, it does matter that you are on 3.0
