There’s either the SKIDROW crack, or server emulator for AC2 – either one works fine offline.

You don’t really require an internet connection mate.
You will require it IF you have Genuine version of the game (DRM). Else, You can use SKIDROW crack. It will work fine

UBISOFT(Creators of the game) has made a new security for AC-II. It uses DRM

It needs Online Connectivity if you wish to play the game.
