MKV-files : How to change subtitles and/or sound

I know that playing a .mkv file on my PC with VLC-Player lets me to chose the subtitles and sound (if multiple are present).
But I would like to know how to solve several things I want to do so I can better enjoy .mkv video files. How can I: (1) choose which of the subtitles and sound to play if multiple are present?
(2) eliminate unwanted subtitles and/or sound?
(3) burn a DVD for a hardware DVD-player connected to a TV?

You should be able to select what streams you play with your player..
If ,however, you wish to remove some audio or subtitle streams , then use MKVmerge.
It lists out all the streams and you can tick the entries to put back what you want..

A handy app for telling you what is inside a video file is MediaInfo.

To burn a DVD from video file(s), you can use ConvertXtoDVD.

Use mkvmerge GUI to set the default track flag for the subtitles and audio you want, then remux. (2) eliminate unwanted subtitles and/or sound?
Use mkvmerge GUI and deselect the subtitles and audio tracks you don’t want, then remux.
(3) burn a DVD for a hardware DVD-player connected to a TV?
I like TMPGEnc Video Mastering Works but be aware that if you burn a hi-def mkv (720p or 1080p) to a DVD, it will not have the same resolution but will be resized to 480p.
