Daily deal website

Hi all, has anyone bought a deal from a daily deal site or knows how they work?, i’m about to create a niched daily deal site but i was wondering how to ensure the local businesses know it’s my customer and how do i get paid?
For example: a night club charges $10 cover, i ask for a certain % of cover per person i bring them. A restaurant has an average entree price of $12, and i bring them 20 customers per night and ask for %. How do they keep track of who i bring them, how do i get paid?
Also are they other ways to get deals other than contacting them like partnering with another daily deal site for example?

You get them to pay you the entrance price to the club in exchange for a coupon. they present the coupon to get into the club instead of the cash and you pay the money to the club once they return the coupon to you.
