A Photoshop question

I have a simple question for the Photoshop experts please: I have a picture that I intend to convert it into Black & White but I’d like to preserve [for the final] a single color [red for some fruits on a table…]; how am I supposed to do that please?
Can anyone provide me a step-by-step tutorial please? [or at least to point me toward one…]

PS: I am using Photoshop CS5…
use the selection tool to select the area with the color (optional)
go to “select” menu and use “select color range”
click a mid-color sample (½ way between darkest and lightest) and use the slider to expand or decrease the color range
copy the result
make the pic B&W then paste the copied part back into the image
i’m no expert myself, but i think i can do that…
all u need is to use lasso tool to cover the color u want to preserve, or magic wands works too > then right click and choose “select inverse” > then change your hue & saturation that u want…

I prefer to it with a transparent layer of the original over the B&W – that way you can erase what you want and feather it in to look nice.
