Quick help choosing windows version

I need to convince my boss to get us a budget for a new local server but he wants to see some benefits of using a server (Windows 2008 server) instead of a workstation (with Win 7 Home premium) as a server.
My mind is slow right now, been searching the net for some ready-made comparison but didn’t find any.
Can someone please help me out and point some facts, like:

I think your not not looking at it the right way, It’s not about X vs Y OS, It’s all about needs!
What exactly is it used for?
3rd party server apps are used I presume, Which ones?
How many clients is it serving?
