how can I deny printing if document size is over X amount of Bytes, Kilobytes, or Megabytes
any help

Nothing in Windows itself that does this that I am aware of.
You could try

The software allows you to:
Define the maximum number of pages allowed in a single print job
Define the maximum spool size of a print job (to prevent large jobs blocking the printer)
