The 2500K has an unlocked multiplier allowing for higher overclocks by raising the multiplier. The 2500 only allows for a 41x multiplier as its highest.
Sandybridge’s overclocking is essentially based on its multiplier, so the difference in the overclockability between the two is significant.
On a side note, a simple google search yields a lot of results for this question, so you won’t have to wait for people’s responses.
